Raclette Dinner
Ingredients
- Raclette cheese
- Olive oil
- Salt & Pepper
Traditional Accompaniments
- Boiled baby potatoes
- Cured meats (salami, pepperoni, ham, prosciutto, etc.)
- Cornichons (tiny dill pickles)
- Cocktail onions
- Crusty breads (such as French bread)
Modern Additions
- Grilled vegetables (mushrooms, asparagus, bell peppers, onions)
- Bite-sized cooked meats (chicken, steak, meatballs, shrimp, smoked sausage, etc.)
How to Make Accompaniments
Boiled Baby Potatoes Rinse the baby potatoes thoroughly. Boil in salted water for 12–15 minutes, or until tender. Drain and keep warm until serving.
Cured Meats Arrange salami, pepperoni, ham, prosciutto, or other cured meats on a serving plate.Keep chilled until ready to serve.
Pickles & Cocktail Onions Place cornichons and cocktail onions into small serving bowls. Set aside until serving time.
Crusty Breads Slice French bread or other crusty breads into bite-sized pieces.
Modern Additions 5. Grilled Vegetables Preheat a grill pan or griddle over medium heat. Cut mushrooms, asparagus, bell peppers, onions, or other vegetables into bite-sized pieces. Toss with olive oil, salt, and pepper. Grill until tender and lightly charred.
- Bite-Sized Cooked Meats Choose your preferred proteins: chicken, steak, meatballs, shrimp, smoked sausage, etc. Cut into bite-sized pieces. Cook in a pan with a little olive oil; season with salt and pepper. Transfer to a serving dish when done.
How to Make Raclette 7. Slice the raclette cheese and place it in a raclette pan.
Melt the cheese slowly using the candle flame that comes with the pan (or a low-heat griddle).
Allow the cheese to melt gradually — heating it too quickly may cause it to separate and lose its smooth, gooey texture.
When fully melted, gently slide the cheese over baby potatoes, pickles, cured meats, or any of your favorite toppings.
