ยีสต์สด (Compressed yeast) : เป็นยีสต์ที่มีลักษณะเป็นก้อนสีครีมหรือสีน้ำตาลด้วยได้ ก่อนใช้จำเป็นต้องละลายกับน้ำอุ่นจนถึงร้อน ทิ้งไว้ประมาณ 5-10 นาที แล้วจึงนำมาใช้ทำขนมเบเกอรี่ต่อได้

Active Dry Yeast: Used in a similar way to fresh yeast, but the difference is that it has a longer shelf life.
Instant Dry Yeast: the most common type of yeast, available in a convenient powdered form that is easy to use and compatible with a variety of foods. Unlike other types of yeasts, there is no need to activate it with warm water before it is used in baking, and can be directly mixed in with the dough.

Steps to Making Sourdough Bread:
Prepare 20 grams of yeast (for compressed yeast and active dry yeast, mix with water and wait until the yeast becomes frothy)
Mix bread flour, whole wheat flour, and durum wheat flour together until well combined. Then add water and let dough rest for 45 minutes to 1 hour.
Start mixing salt into the dough little by little, followed by the prepared yeast, and knead dough to combine.
Let the dough rest for about 1 hour, lift the dough and repeat the process 3 more times.
Shape the dough and tightly wrap it with clear plastic wrap (ensuring no air pockets) and place it in the refrigerator for 12-36 hours.
Preheat the oven for at least 30-45 minutes before placing the dough inside.
